Our cocktail last summer was the Sparkling Paloma. So delicious and refreshing, but we wanted something new to sip this season!
Limoncello kept popping up every time I turned around. Emily brought some back from her Italy trip. Our friends gifted us their special homemade limoncello. Hmmm.
Taking a page from the Aperol Spritz, let’s modify it with Limoncello ~the “Limoncello Spritz.”
What you will need: 2 ounces of Limoncello, 3 ounces of Prosecco or Champagne, whatever you have on hand. A splash of club soda as a floater (or not!). Lemons as garnish and a sprig of mint.
I love using big square ice cubes in cocktails this summer. Limoncello over ice first. Maybe I put in a bit more than 2 ounces…..
Champagne (in my case) and a splash of club soda. I couldn’t find mint, so I used basil as a garnish, but mint will be much better!
This drink is very light. I say this because the Sparkling Paloma has a distinct taste with the combination of blanco tequila and sparkling grapefruit. The Aperol Spritz is also very unique and you really have to “like” Aperol, like all of Rome does!
This little number is really light and smooth. Some bubbles, a hint of lemon, nothing overwhelming.
My next lemon recipe is a total cheat. Both of these flavors are delicious, so I combine them as an hors d’oeuvre and doctor them up.
A little lemon garlic hummus on the bottom and the lemon dill hummus on top.
Cover with (good) olive oil and some red pepper flakes and you will not believe the compliments you are going to get. This is great with cut up veggies, crackers, corn chips – whatever.
Here is a little vignette featuring my lemon hummus concoction. It really is delicious and even better paired with the Limoncello Spritz!
