I haven’t done many food posts. Â I leave food blogging to the experts like my favorite Smitten Kitchen. Â But, in the spirit of Halloween, I wanted to make something (easy) for the sweet little ghouls in our neighborhood.
After Googling lots of Halloween recipes, I decided to make a ghost cupcake. Â A brownie cupcake, buttercream icing and mini chocolate chips for the eyes and mouth.
I am a baking cheater… Â No “from scratch” for me. Â Hello Ghiradelli Double Chocolate brownie mix!
Into my ugly cupcake pan at 325 degrees for about 10-12 minutes. Â Or, until the knife comes out clean.
Out of the oven to cool.
I don’t think I’ve ever made buttercream icing before. Â 4 cups of sugar? Â OMG. Â Ok, 8 ounces of cream cheese, 8 ounces of butter, 4 cups of SUGAR and 1 tsp of vanilla extract.
It is good!
My sad little ziplock bag full of icing. Â I cut a small hole in the corner to pipe my ghost swirls on each cupcake.
I put a big blob of icing in the middle of each cupcake, then swirled around it to make the ghost.

They are cute, even though my icing talents are questionable.
I used two boxes of brownie mix that made 24 cupcakes in total.
Stick the cupcakes in the refrigerator to keep the the swirls from wilting. Â They do taste delicious!
